In Thailand, there are thousands of ways to cook stir-fried rice. As we know Thailand is one of the places in the world that used a lot of spices for cooking and people there use them to mix and match to prevent their recipes.

Red curry paste is one of the most famous paste to use for many recipes, for example, Thai red curry, Thai fish cake, steamed fish with curry paste (Hor-Mok), etc.

Rice I use Basmati rice because it tender and fluffy and the grains it separate from one another, its good for making stir-fried, and it even better if you use rice that has been refrigerated over night because it will help the rice not stick together.

Red curry paste I use Store bought to save my time to prepare.

Cooked time : 20 minutes 

Serving : 4 (as a main course)

Ingredients.

Stir fried rice ingredients 500g cooked rice.

4 cup cooked rice

2-3 carrots.

5-6 leafs Chinese leaf.

3 clove garlics chopped.

6 champion mushrooms.

2 tsp red curry paste.

2 tbsp oyster sauce.

1 tbsp soy sauce.

2 tsp fish sauce.

2 tbsp sugar.

2 tbsp cooking oil.

In a Wok, heat up the oil over medium-high heat. Add chopped garlic cook, stirring frequently, for about 1 minute.

Turn the gas down to medium low add red curry paste break the paste stirring frequently until the fragrance of spices and herbs in red curry paste come up.

Add carrot cook, for about 2-3 minutes then add the remain vegetables. Toss everything together until the vegetable getting soft.

Add cooked rice toss everything again until the rice coated with red curry sauce then turn the gas off and serve.


I like serve my stir fried rice with fried egg, siding sauce (made of fish sauce, chilli, garlic and lime juice) and fill slices of cucumber.
