Hidden Vegetable pasta sauce

Hidden veggies in food are one of my talents. My kids are so fuzzy especially when it comes down to the vegetable menu but luckily they love eating pasta. The best way to prevent them is with good nutrients, I hide veggies in pasta sauce so they couldn’t notice.

Ingredients

Chopped tomatoes I use a can of chopped tomatoes but if you have extra time, you can make fresh tomatoes.

Passata is tomatoes pureed, it’s 100% tomatoes and makes a gorgeously thick tomato-based sauce.

vegetables used vegetables that do not contain a strong fragrance such as bell pepper, courgette, carrot, butternut squash, mushroom, leek all work great. Dicing it into small pieces to reduce the cooking time. 

Smoke paprika to boost the test with spice.

sugar tomatoes can be quite acidic, so if making a sauce with a lot of them, you might need to add sweetener to neutrlize the acidity of the sauce.

  • 400g chopped tomatoes.
  • 500g passata.
  • 1 red bell pepper.
  • 1 courgette.
  • 2 carrots.
  • 1 clove garlic.
  • 1 large onion.
  • 2 tbsp olive oil.
  • 2 tbsp brown sugar.
  • 1/2 tsp salt.
  • 1/4 tsp smoke paprika.
  • 400ml water.

How to make Hidden Vegetable pasta sauce.



  • Heat a pot over medium heat, add in olive oil stir in the onion for 2-3 minutes or until translucent. then add garlic, stir, and cook for a minute.
  • Add in carrots, courgette, and pepper add some salt cook about 10 minuts or until all vegetables turn soft, stiring occasionally. 
  • Add in the chopped tomatoes, passanta, smoked paprika and water. Adjust heat to medium-high and bring to boil. Once you reach a boil, bring down the heat to low, cover and simmer for 30-35 minutes.
  • Using a handheld immersion blender puree on high until you achieve your desired consistency. if your sauce is too thick, add in more water. taste depending how many veggie you use (the more veggies the more intense veggie flavor), you may need to add in salt and sugar depending on the teste of your sauce.


This sauce is not only perfect for any pasta dishes, but I also use it as a healthy alternative to another menu e.g. macaroni cheese, pizza, cheese twist,s or lasagne by using it instead of tomato sauce or chopped tomatoes.
