This easy banana muffins. One of the thing that I love about this recipe is that I don't need a mixer to make it. I only need a couple of bowls and it will done about 30 minutes.

Ingredients
- 3 ripe banana
- 1 egg
- 50g caster sugars
- 50g brown sugars
- 90g vegetable oil
- 1 tsp vanilla extract
- 200g all propose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- Pinch of salt
How to make banana muffins
- Preheat the oven 180C Line a 12 muffins pan with muffin liner and set aside.
- In a large mixing bowl, whisk together the all proposed flour, baking powder, baking soda ground cinnamon, and salt until all are combined. Set said.
- In a separate mixing bowl, whisk together egg and sugar until light and fluffy then add vegetables oil, vanilla extract, and mashed banana until they combine.
- Add dry ingredients to wet ingredients and mix together until combined do not over-mix the batter.
Fill the batter up to 3/4 of the muffin liner. |
- Evenly distribute the batter between all 12 muffins liner. Fill the batter up to 3/4 of the muffin liner, to keep space for better rise-up.
- Bake 180C for 20-22 minutes or until the wooden skewer inserted into the muffin comes to clean. Remover from the oven and let it cool down on a wire rack.
I think there muffins are fantastic plain, but if you wanted to add some chocolate chips, chopped nuts, raisinor even blueberries. These also freeze well, so you can make a batch and leave them in the freezer for an easy breakfast or snack when you need!
