Healthy Easy Vegetable soup

Vegetable soup is one of my favorite recipes because it's easy to make, it's cheap, it can be done in one pot with less washing and it's full of flavor. Plus, it makes about six to eight servings which means you ucan make one pot of this soup and eat more of veggies meals for a couple of day. And the shop test even better on day two!!


For this vegetable soup recipe I'm using fresh vegetables plus canned tomato, lentils and a variety of seasonings. 

Ingredients Needed
  • Vegetables - spinach, potatoes, carrots, celery, onion and garlic.
  • Canned - chopped tomatoes, lentils and tomatoes paste. 
  • Vegetable stock - this is the base of the soup along with the juice from chopped tomatoes canned.
  • Olive oil - to saute the vegetable.
  • Seasoning and spice - sea salt and pepper.
  • Fresh herbs - thyme, rosemary, and basil.


How to Make Vegetable Soup

  • Sauté vegetable - start by heating a large soup pot over medium heat on the stovetop. Add olive oil and once warm, the onion, and herbs cook for 1-2 minutes until smell aroma of the herbs comes out then add celery, potatoes, and carrots cook for 10 minutes or until the vegetable are tender.
  • Add seasoning - reasoning with salt and pepper stir everything together add chopped tomatoes, tomato paste and some water when the soup boil add vegetable stock.
  • Simmer - increase the heat to high and bring the soup to boil. Cover the lit and reduce to simmer. Cook for 25-30 minutes or until the vegetable are tender, then add lentil let it boil for 5 minutes.
  • Finish - remove from the heat, test and season with salt and pepper if it needed then add basil stir together, and put the lit on

How to serve 

Vegetable soup can serve light meal on it own or serve with a slice of crusty bread like sourdough.




Healthy Easy Vegetable soup Recipe 

Prep Time : 15 minutes.

Cook Time : 45 minutes.   

Total Time : 1 hour.

Ingredients 

  • 2 Tbsp olive oil
  • 1 medium onion chopped
  • 2 large carrots chopped
  • 2 stalk celery
  • 1/2 Kg potatoes
  • 2 canned chopped tomatoes
  • 1 canned of tomato paste
  • 1 canned lentils 
  • 1 cube of vegetable stock
  • 2 cloves of garlic
  • 2 Tsp Rosemary 
  • 2 Tsp Thyme
  • A hand full of basil
  • Salt
  • Pepper

Instruction

  1. Preheat the soup pot over medium heat and add 2 Tbsp of olive oil. And add chopped onion, garlic, and herbs and saute for 1-2 minutes until it is fragrant add carrots, potatoes, and celery then saute for 6-8 minutes.
  2. Add 2 canned of chopped tomatoes, a can of tomatoes paste and vegetable stock bring it to boil then reduce heat to simmer and cook for 25 minutes or until the vegetable are tender.
  3. Once the vegetable are tender, add lentils. Season with salt and pepper to taste and simmer for another 5-8 minutes then add basil and remove from the heat.
